You have seen it everywhere and now it is time to make it at home for a fraction of the deli price. The Italian Grinder is layered with cold cuts, topped with a creamy shredded salad, and packed with flavor in every single bite. Mimi's version keeps it simple, keeps it budget friendly, and keeps everybody at the table happy.

Recipe

Ingredients

For the sandwich:

  • 4 hoagie rolls

  • ¼ lb deli turkey

  • ¼ lb deli ham

  • ¼ lb salami

  • ¼ lb pepperoni

  • 4 slices provolone cheese

  • 1 roma tomato sliced thin

For the grinder salad:

  • 2 cups shredded iceberg lettuce

  • ¼ red onion thinly sliced

  • ¼ cup pepperoncini peppers sliced

  • ⅓ cup mayonnaise

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • Salt and black pepper to taste

Instructions

Step 1 — Make the grinder salad In a large bowl combine the shredded iceberg lettuce, red onion, and pepperoncini peppers. Add the mayonnaise, red wine vinegar, Italian seasoning, garlic powder, salt and pepper. Toss until everything is fully coated. Taste and adjust seasoning. Set aside — the salad gets better as it sits so making it first is always the move.

Step 2 — Toast the rolls Slice your hoagie rolls lengthwise and place them open faced in the oven at 375 degrees for 5 minutes until lightly toasted. Toasting the bread is what separates a good grinder from a great one — it holds up under the salad and adds crunch to every bite.

Step 3 — Layer the meats and cheese Start with the provolone on the bottom half of each roll. Then layer your turkey, ham, salami, and pepperoni. Stack it up — this sandwich is supposed to be loaded. Add your tomato slices on top of the meat.

Step 4 — Add the grinder salad Take a generous scoop of your grinder salad and pile it right on top. The creamy tangy salad on top of the warm toasted bread and cold deli meat is what makes this sandwich so addictive.

Step 5 — Close and serve Press the top half of the roll down gently, slice on the diagonal, and serve immediately. Have napkins ready — this one is gloriously messy.

Mimi's Tips

  • Drizzle a little olive oil on the meat before adding the salad for extra flavor

  • Add a pinch of red pepper flakes if you like a little heat

  • One less meat works fine if you need to stretch the budget further — it still tastes incredible

  • Leftover grinder salad is amazing on burgers, wraps, and even with chips
